I get mine by hanging around a spring fed lake all night with a kerosene lantern, some smoking material, and a pair of fishing rods.
I filet em, then pop em in the deep fryer.

I get mine out of my brothers pond, but according to his calculations all fish out of there cost him 8.99 per pound. That is of course after all his in-laws fish it clean for him after the stocking. I read an article recently that said farm raised catfish cost 58.65 cents per pound to raise.

It's white, with a little pink in it.
It's more fibrous than most fish, and can be cooked, and served, to imitate lobster.
