I once had a special container for sprouting.
It was, basically, two mexican clay pie plates (porous clay) and to use it, you would wash your seed, then put it in the (soaked first) container.
Every day, you take off the lid, and rinse the seeds off.
Depending on the variety, the seeds usually start sprouting in a day or two.
I would think you could use any similar setup, for instance, one of the tortilla warmers, or corn roasters, that are also made out of a porous clay.
If you wanted to use a non porous container, I'd recommend glass or china, with a soft cloth, or paper towel to hold some moisture. The seeds need to be at room temperature, or a bit warmer, and in a dark, damp (not wet) place. The cover will retain the moisture.
For a MASSIVE amount of sprouts, you could use one of the 'blue enamalware' turkey roasting pans.
Come to think about it, I can't see why a good wooden box (oak, or something else water resistant) wouldnt serve as excellent.
